1. Separate the upper and lower parts of the caffettiera. Remove the metal basket. Pour the required amount of cold water into the lower section to a level just below the valve and then insert filter basket.
2. Add the ground coffee to the filter basket to the level of the rim, then flatten and compact lightly using the back of the spoon.
3. Screw on the top of caffettiera and place on hotplate at medium heat, placing handles away from direct heat.
4. The coffee is made by water underpressure being forced through the ground coffee, up through the valve and into the top of the coffee pot. Heat until the noise of the water being forced under pressure ceases.
5. Remove the caffettiera from heat otherwise the coffee may burn and taste bitter.
