In celebrating the 50 year anniversary of Vittoria Coffee, Les Schirato CEO, hosted two dinners at the Park Hyatt Harbour Kitchen & Bar restaurant on February 23 and 24.
Annie Feolde, the first female chef in Italy to be awarded 3 Michelin Stars designed a three star menu exclusively for this memorable evening.
Les explains, “Naturally we’re extremely proud to have such an accomplished chef coming to Australia.
The synergy with Italian cuisine and recognition of awarded chefs was a great fit.”
Each night 100 friends and clients, including award winning chefs such as Neil Perry and Matt Moran, hospitality identities such as John and Bettina Hemmes and food media were treated to a 3-Michelin Star dinner designed by Feolde.
Menu highlights included a snapper scallop breaded in black olives; agnolotti filled with ricotta, saffron and mint, tossed with king prawns and tomato and roasted pigeon with smoked eggplant. Desserts were three-fold, including a coconut and mango spiral, with lemon marshmallow and yoghurt gelato. The cuisine was paired with a selection of fine Italian wines by Ruffino.
Feolde was accompanied by Alessandro Pavoni, the Park Hyatt’s Executive Chef in addition to her head chef Italo Bassi and awarded Pastry Chef Loretta Fanella. Ms Feolde joins an esteemed group of past Vittoria hosted delegates including Jean-Luc Naret, Director of the Michelin Giude and Alain Ducasse.
