THE VIBE: An atrium dining room, complete with pepper trees, pendant lights and a tiered fountain, transports Angelenos to the south of France. Downtown LA is currently undergoing a metamorphosis reflected in this gorgeous new arrival.
SERVING: Helmed by acclaimed chef Tony Esnault, of Church & State, and his partner Yassmin Sarmadi, Spring excels in French staples such as salade niçoise, fish stew, and escargot.

Avalon Hotel & Bungalows
LOCATION: Palm Springs, two hours drive from LA.
THE VIBE: Kelly Wearstler designed this sophisticated oasis in the desert, which hints at Palm Spring's halcyon days with its black and white palette, yellow flourishes and seductive pools.
SERVING: Chi Chi specialises in crowd-pleasing, Latin-inflected dishes like enchiladas, sopes and banana leaf roasted pork.
COFFEE ORDER: Order a cold brew by the main pool, dotted with sunflower lounge chairs and billowing white tents. Or retire to your Hollywood Regency-style room equipped with its own Espressotoria machine.
