This passion, dedication and unwavering commitment to the roasting process has inspired the development of our new, highly exclusive Lab Release showcasing seasonal, specialty Arabica coffees from around the world.

Developed using state-of-the-art equipment alongside Australia's leading cafes. This blend performs best at a temperature of 92 degrees Celsius and is only suitable for machines with accurate temperature control.

We blend Edwin’s beans with the Brazil, Sumatran and other Colombian origin and measure for moisture. We adjust the temperature and roasting time on our 300kg Probat R1500 drum roasters. It’s a slower process compared to air roasting, but it’s a more controlled method that allows us to achieve a consistent roast profile to bring out the vibrant flavours in this specialty blend. 

Our roasting process includes 23 steps measuring a range of critical variables before, during and after the roasting process. Our latest addition to our quality lab is the Metrohm Omnis system, the only one in Australia, which allows us to scientifically analyse coffee for acidity, pH, density, brix, total dissolved solids, and caffeine levels. By combining these precise measurements with our sensory testing, we gain a comprehensive understanding of this blend’s unique profile.

    Can't dial in the grind for espresso

    Was attracted by a review that focused on the blending and roasting process. Lovely taste profile from the French Press, which I was driven to after being unable to dial in a grind to produce pressure for an espresso. That is an issue I usually associate with stale beans and why I tend to stay away from the major roasters on the supermarket shelves.

    Mystic Look & Great Taste!

    This was an excellent experience. From this mystic design to the sweet notes of the beans. I found it to be a bit above mid strength. I'm a fan of the higher strength variety, however this one I found very pleasant & different. It is very interesting & introduces a nice balance in its complexity. An experience that was worth it!

    Great blend!

    Good notes..great blend and unique with a good strength and undertones of chocolate and what seems like a raspberry aftertaste.... everyone in our office loves it..
